Meliodas apple pie from the seven deadly sins, but joking aside at the end, it was really good!
Pie Crust:
-320 all purpose flour
-7g sugar
-2g salt
-225g cold butter
-about 100ml cold water
In a food processor mix flour, sugar and salt. Cut cold butter into little pieces and mix until coarse crumps form, with some smaller pieces. Add cold water, mix until smaller balls form. The dough should stick together. Pull together your dough (don't knead) Separate and form into 2 equal disks. Wrap into plastic wrap and chill at least for 1 hour in the fridge.
Sauce:
-110g butter
-25g flour
-60ml water
-150g sugar
On medium heat melt the butter, add flour, whisk and simmer for 1 minute. Whisk in your water and sugar. Bring to a boil, reduce the heat and simmer for 3 minutes, keep stirring.
Apple Pie:
-4-5 Apples
-1 1/2 tbsp cinammon
-1 egg yolk
-1 tbsp sugar
Peel your apples and remove cores. Slice them thinly and add into a bowl. Mix with cinammon and your sauce. Roll out your dough on a floured work surface. Roll out your pie crust and put into the pie pan. Place your apple mixture into the center. Roll out the second dough and cut into 10 stripes. Make a lattice topping. Place remaining dough at the edges around where needed. Tuck the excess pie dough into the pan. Crimp or flute the edges of the pie dough. Mix 1 egg yolk with sugar and cover everything with it.
At a preheated oven, bake at 210°C/420°F for 15 minutes. Reduce the heat and bake at 175°C/350°F for another 45 minutes.
